I own three of the same card — how do I record that?

Add it three times. Each copy is its own entry, so each one can carry its own condition and its own purchase price — which is how it works in real life, where your three Charizards aren't interchangeable.

There's no quantity field for that reason. A CSV import with a quantity column does the same thing: quantity 3 creates three separate entries.
